Slow Cooker Italian Sausage Soup

Even though there is spring in the air, we are still using our slow cooker! It gives us extra time to enjoy the weather without being tied to the kitchen preparing dinner.

This recipe was a hit even with our pickiest testers (aka. kids) and it made great leftovers. Be sure to keep some extra vegetable broth on hand to add to leftovers if needed. The noodles tend to absorb extra liquid as they sit, so a splash of broth is a good remedy for this.

We adjusted the spices slightly at the end of the cook time and encourage you to do so if you find it necessary. We know everyone has different tastes, so we left the recipe as is and you can add if needed.

Ingredients

  • 1 lb ground Italian Sausage
  • 2 large carrots (diced)
  • 2 cans cannellini beans (drained & rinsed)
  • 1 red onion (diced)
  • 2 cans diced tomatoes (undrained)
  • 4-5 cups vegetable broth
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • 3/4 box macaroni noodles
  • 2 cups baby spinach

Instructions

Cook 1 lb ground Italian sausage on your stovetop. Crumble as you cook.

Add cooked sausage, diced carrots, 2 cans cannellini beans (drained and rinsed), diced red onion, 2 cans diced tomatoes, 4-5 cups vegetable broth, garlic powder, Italian seasoning and salt and pepper to your slow cooker.

Stir and cook on low for 4-5 hours. 30 mins before the end of cook time, add in macaroni noodles. Stir and cook for 30 mins or until noodles are tender.

Turn off heat and add 2 cups baby spinach. Cover and allow spinach to soften and wilt slightly before serving. Adjust seasoning if desired. Enjoy!
