Paleo Curry Chicken

Ingredients

  • ▪️ 1 1/2 tbsp curry powder
    ▪️1 tbsp garam masala spice 
    ▪️1 tsp turmeric
    ▪️1 1/2 tsp chili powder
    ▪️1 tsp salt
    ▪️1 red onion (minced) 
    ▪️3 garlic cloves minced
    ▪️1 tsp fresh ginger minced (or 1 tsp ground)
    ▪️6 oz tomato paste 
    ▪️1 (15 oz) can full fat coconut milk 
    ▪️1 (15 oz) can crushed tomatoes
    ▪️1 1/2 lbs chicken breast
    ▪️1/2 cup cilantro (optional garnish)
    ▪️ Rice, cauliflower rice or lettuce (optional for serving)

Instructions

Add all ingredients (minus the cilantro) to a slow cooker and cook on low for 6 hours. (Or until chicken is fully cooked and shreds easily)

Shred chicken using 2 forks and stir to combine. Let it sit for a few more mins to absorb more of the sauce.

Serve over rice, cauliflower rice, as a salad or on its own. Top with cilantro if desired.
