Paleo Curry Chicken

Ingredients
- ▪️ 1 1/2 tbsp curry powder▪️1 tbsp garam masala spice▪️1 tsp turmeric▪️1 1/2 tsp chili powder▪️1 tsp salt▪️1 red onion (minced)▪️3 garlic cloves minced▪️1 tsp fresh ginger minced (or 1 tsp ground)▪️6 oz tomato paste▪️1 (15 oz) can full fat coconut milk▪️1 (15 oz) can crushed tomatoes▪️1 1/2 lbs chicken breast▪️1/2 cup cilantro (optional garnish)▪️ Rice, cauliflower rice or lettuce (optional for serving)

Add all ingredients (minus the cilantro) to a slow cooker and cook on low for 6 hours. (Or until chicken is fully cooked and shreds easily)

Shred chicken using 2 forks and stir to combine. Let it sit for a few more mins to absorb more of the sauce.

Serve over rice, cauliflower rice, as a salad or on its own. Top with cilantro if desired.
