Homemade Vanilla Granola

Granola is a great way to add crunch to a parfait or satisfy a snack craving in a healthy and hearty way. Store bought granola can get expensive and once you realize how easy it is to make your own, you may never go back! 

This gluten free granola recipe can also be made vegan by replacing the honey with pure maple syrup. We upped the crunch with some sliced almonds and chia seeds. We used this recipe to top one of our favorite plant based superfood breakfast bowls. This is bound to be a family favorite you will want to repeat!

This granola can be stored for up to a week in an airtight container. We love using a mason jar to store ours, but any airtight container will do. 

Homemade Vanilla Granola

Start your morning right with this plant based, superfood breakfast bowl! It’s vegan, gluten free and incredibly delicious.

  • 3 cups gluten free rolled oats

For the curry

  • 1/4 cup brown sugar (1/8 cup for less sweet granola)
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 4 tsp pure vanilla extract
  • 1/3 cup coconut oil
  • 1/3 cup raw honey (or pure maple syrup for vegan version)
  • 1/4 cup sliced almonds
  • 4 tbsp chia seeds
  • 1 sheet parchment paper



Preheat oven to 300 degrees. 


Combine oats, brown sugar, salt, cinnamon and vanilla extract into a large bowl. 


Melt 1/3 cup coconut oil and 1/3 cup honey or maple syrup together. (You can do this on the stovetop in a small saucepan). Mix to combine and then pour over oat mixture. 


Mix to combine.


Spread a sheet parchment paper onto a baking sheet. 


Spread granola mixture evenly across the baking sheet. 


Sprinkle with sliced almonds and chia seeds. 


Bake for 25-30 mins, stirring halfway through. 


Allow to cool (this is when it becomes crunch) and enjoy!
